How to boil matumbo:
First, clean the matumbo thoroughly under running water and cut it into manageable pieces. Place it in a sufuria, add enough clean water to cover it, and bring it to a boil. You can add ginger, garlic or other aromatics for extra flavour.

Allow it to simmer until tender. Depending on the type and size of the pieces, this can take about 1½–3 hours in a normal pot. A pressure cooker can significantly reduce the cooking time. Once tender, drain if necessary and use the boiled matumbo to prepare your preferred stew with onions, tomatoes, spices and vegetables.

Matumbo is a source of protein and provides important micronutrients, including vitamin B12, selenium, zinc and iron. Protein supports the growth and maintenance of body tissues, while these vitamins and minerals contribute to functions such as normal red blood cell formation and immune function.

As with most foods, preparation and portion size matter. Combine matumbo with vegetables and a suitable carbohydrate such as ugali, rice or potatoes for a more balanced meal.
